GENERAL TSO'S CHICKEN RECIPE

One of our favorite foods to eat at the Chinese Restaurant near our place is General Tso's Chicken. I tried to cook this menu a few months ago and it turned out good but the version that I made was not the same as the one we had at our favorite Chinese Restaurant. Mine has an authentic Asian mix. General Tso's is a sweet and spicy deep-fried chicken with several ingredients in it. It is popularly served here in almost all American Chinese restaurants as well as in Canadian Chinese restaurants.

Here's the recipe:

Ingredients for the sauce:
1 and 1/2 tsp garlic, minced
1 and 1/2 teaspoon ginger, minced
1/2 cup cornstarch
1/2 cup soy sauce
1/4 cup white vinegar
3/4 cup sugar
1/4 cup cooking wine
1 can of chicken broth
1/4 cup Water

Ingredients for the deep-fried meat:
3 lbs skinless, boneless chicken meat, cut into large chunks
1 egg, beaten
1 cup cornstarch
1/4 cup soy sauce
10 small dried hot peppers, seeds removed
2 cups green onions,sliced
1 tsp white pepper
1 tbsp cooking oil

DIRECTIONS:
For the sauce:
In a large mixing bowl, dissolve 1/2 cup cornstarch with water. Add the rest of the ingredients for the sauce. Stir and refrigerate(Stir it again when ready to use).
For the deep fried chicken:
Mix the chicken, soy sauce and white pepper in a separate large mixing bowl then stir in the egg. Add cornstarch, and mix until chicken pieces are coated evenly. In a large wok, deep fry the chicken pieces placing them one a time. Fry the chicken pieces until crispy. Drain them in a strainer or place them in paper towels to remove excess oil.

Pour 1 tablespoon of cooking oil in a wok and wait until it is hot enough for cooking. Then add the onions and peppers and stir-fry. Add the stirred sauce in a wok. Cook and wait until it thickens (if ever the sauce gets too thick just add more water to thin it). Lastly, add the chicken to the sauce and cook until it's hot. Serve with rice.
