I want to share with you an easy way to prepare a Graham Cracker Cake. Mango is my favorite fruit when preparing this kind of cake but you may use fruit cocktail or any fresh fruits you want.

INGREDIENTS:
1 pack Graham crackers
square pan 8x12in
2 Nestle All-purpose cream
1 can condensed milk
Fruit cocktail 500g OR ripe mangoes sliced thinly
1 small can of peaches halves (optional)
1 bottle of cherries (optional)

DIRECTIONS:
1. Chill the Nestle All-purpose cream in the freezer.
2.In a large bowl, combine the fruit cocktail, all purpose cream and condensed milk. Stir and set aside.(Save some All purpose cream for the top most layer of the cake).
2.Arrange the Graham crackers nicely in the container and put some crushed graham crackers on some spaces. (To crush the graham crackers, put your graham crackers in a ziploc bag, close it and smash the bag until the crackers are crushed thoroughly).
3.Pour the mixture of fruits evenly on the top of the graham crackers until it covers the crackers.
4. Repeat steps 2 and 3. It depends on you how many layers you want.
5.. Smooth the top most layer with All-purpose cream and decorate it with peach halves and cherries as shown in the picture.
6. Chill for at least 4 hours.

Ingredients:
1 head of romaine lettuce
1 egg
2 tablespoons freshly grated Parmesan cheese
1 clove garlic, cut in half
3 slices cold crisp buttered toast
1 two ounce can anchovies, drained and cut into pieces
1/2 bunch arugula
1-1/2 tablespoons lemon juice
1 teaspoon Dijon or Dusseldorf mustard
6 tablespoons olive oil
ground black pepper to taste

Boil water and place the egg. After 60 seconds, drain.Separate the romaine leaves from the core and tear or cut into bite-sized pieces. Cut the arugula leaves in half, discarding the root ends. Put greens into a bowl of cold water and gently swish to clean. Spin greens dry in a salad spinner. Rub the toast slices with the garlic halves. Reserve the garlic. Cut toast into bite-sized pieces. Rub a large salad bowl with the garlic, then mash the garlic into a paste in the bottom of the bowl. Add the egg, lemon juice, olive oil, and mustard and whisk. Add the romaine, arugula, anchovies, toast, parmesan cheese and Toss gently.

One of my friends whom I met here in our state invited us to attend her son's birthday party yesterday late in the afternoon. It's been a long time since I've seen her and other Filipinas from different towns nearby and I'm so glad to see them again. Of course, in an occasion such as this Filipino dishes are served like pansit, lumpia, adobo, pusit and several others aside from the usual American food. During the party there was this game called pinata which is the same as "pok palayok" back home where we hit the "palayok" with wooden bat while blindfolded. I remember when I was kid, every time I joined this kind of game I never won, other times I hit but will only leave a crack on the pot.hehe. Anyway, we had a great time at the party. I would like to greet Shane a Happy Birthday and thank you for inviting us. Also I'm glad to see again one of my friends who just arrived from Alabama with her cute baby.

Before I got married, I didn't know how to bake or even cook meals, but now I'm still learning! Leche Flan is one of my favorite desserts so I tried to make leche flan a few months ago and my hubby liked it!

Ingredients:
10 egg yolks
1 can (390g) evaporated milk
1 can (390g) condensed milk
1 teaspoon of vanilla extract

Last Saturday we went to Fort Massac State Park, Metropolis, Il. It is a very nice park to relax and enjoy the beauty of the nature surrounding it. Or you can just relax and enjoy the overlooking beauty of the Ohio River. When we went there, some people were enjoying swimming in the river. FOUR FLAGS OVER FORT MASSAC. More than 5 centuries ago,the fort was under the control and ownership of the Spanish (1500's) and then sometime later the French took it over. Then the British took it over from the French, then the Americans took it from the British. It was 1974 when George Washington ordered the fort rebuilt and garrisoned. In the year 1908, the Fort Massac State Park was preserved and maintained and was designated the first Illinois State Park. What you are seeing now is a replica of the 1802 American fort. There are 2 barracks, officer quarters, 3 block houses, a well, and a stockade with fence in the fort.

It is a very nice vacation spot and a place to reminisce the rich history of the site.
