GINATAANG MONGGO RECIPE (MUNG BEAN SOUP WITH COCONUT MILK)

When I was in the Philippines my dad used to cook ginisang munggo as the main course and fried fish as a side dish once or twice a month but without gata or coconut milk. When I attended a Filipino-American gathering here in the U.S. few months ago, I had my first ginataang monggo and it was good. I tried to cook it and I love my version of ginataang monggo with its simple ingredients! Here's my recipe:
Ingredients:
4 cloves garlic, minced
1 onion, diced
3/4 cup pork, diced
2 cups mung beans
some spinach or alugbati
1 1/2 cup coconut milk
2 tbsp alamang guisado (sauteed shrimp paste)
2 tsp. cooking oil
2 cups water

Procedure:
Boil the monggo (mung bean) in a casserole dish for 30 minutes or until soft.

Turn the stove to medium heat and place a separate casserole dish on the burner. Add cooking oil and saute the garlic and onion. Add the pork and continue to saute until the pork turns white. Add water, coconut milk, monggo and alamang guisado and boil. You can add more water or alamang guisado depending on your taste. Add spinach. Turn of heat after a minute or so.
